Texas Beef and Beer Chili
2 lb beef chuck cut into 1/2 inch cubes, 8 tbsp olive oil, 5 tbsp chili powder, 1 lb chorizo sausage, sliced, 3 onions, chopped, 8 garlic cloves, 1 tbsp oregano, crushed, 2 tsp ground cumin, 2 tsp salt, 1 tsp ground pepper, 4 lbs canned plum tomatoes, drained, chopped, 24 oz beer, 6 oz tomato paste.
In bowl toss meat, 3 tbsp olive oil, 2 tbsp chili powder. Refrigerate overnight. In skillet heat 3 tbsp oil over medium heat. Brown meat, 5 min. Transfer to pot. Add chorizo to skillet, brown. Add to pot. Reduce heat to medium-low. Add onions, cook 10 min. Add garlic, chili powder, oregano, cumin, salt & pepper. Stir 3 min, add to pot. Add tomatoes, beer, tomato paste. Boil, simmer 3 hrs. Serve with pinto beans, salsa.
Spiced Beer Cake with Buttered Beer Sauce
1 cup light molasses, 1/3 cup vegetable oil, 2 eggs, 2 1/2 cups all-purpose flour, 1 1/2 tsp baking soda, 1/2 tsp ground ginger, 1/4 tsp each ground cinnamon, cloves, nutmeg, 1/2 cup beer, 1 cup raisin, 1/2 cup chopped walnuts. Sauce: 1/4 cup brown sugar, 4 tsp all-purpose flour, 1/2 cup each beer, water, 2 tbsp butter, 1/4 tsp vanilla.
Mix molasses, oil in bowl, add eggs. Stir together flour, soda, ginger, cinnamon, cloves. Add beer, stir in raisins, nuts. Pour into greased, floured 13 x 9 x 2 baking pan. Bake at 350 degrees for 30 min. Cut into squares. Top with sauce. Sauce: In pan add sugar, flour, stir in beer, water. Cook until thickens. Add butter, vanilla.
