In 2007 German researchers compared the health effects of drinking black tea with or without milk. Results showed that drinking black tea significantly improved blood flow and blood vessel elasticity compared with water but the addition of milk completed blunted the heart health benefits. A type of protein found in milk called caseins decreased the amount of heart healthy compounds known as catechins that are found in tea that have cardio-protective effects. Perhaps this is why consumption of black tea has been found to reduce the risk of coronary heart disease in The Netherlands and in men and women in the USA but not in the UK where milk is customarily added to tea.

Hazelnut, Ricotta and Lemon Pesto
1 garlic clove, 1/2 cup toasted hazelnuts, 1/2 cup chopped basil, 5 tbsp extra virgin olive oil, 1 1/2 cups whole-milk ricotta cheese, 3 tbsp fresh lemon juice, 1 1/2 tsp finely grated lemon peel, 3 tbsp grated Pecorino Romano cheese, salt & pepper.
Blend garlic, hazelnuts, basil in processor until finely chopped, add 2 tbsp olive oil. Next add ricotta cheese, lemon juice, lemon peel, remaining 3 tbsp olive oil. Process until well blended. Transfer mixture to bowl, stir in Pecorino Romano cheese. Season to taste. Toss in favorite pasta, use as topping for grilled chicken, or spread on toasted baguette.
